If you spent any time with Mr. Thomas, specially over a meal, then you know that he knew every healthy and/or delicious meal served by local restaurants. This is not to say that other good meals are not out there but if it was organic or free range or grass fed, he had found it. We've visited many of these places and ordered some of those favorites for this report. Enjoy. Also, if you are visiting than this is a good directory of some of the best.
Downtown Flagstaff favorite! Jeff, the current owner does his best to include organic and fresh food in his recipes. Some of the best soups in town.
Grilled chicken salad, a perrenial favorite! Why? The produce is fresh and organic, the dressing - sesame seed oil and tamari - is home made and the chicken is cooked when the item is ordered. We really don't like cold chicken that sat in the fridge, for who knows how long. This factor alone has eliminated some very popular restaurants from this presentation. But there is another important feature on this table, the juice. It is carrot, apple and celery, made fresh. This may be the only restaurant in Flagstaff to make fresh juice with a meal. Just one of many favorites at this establishment.

Crab Cake Salad, when only the best will do. Contains fresh baby greens, tossed with roasted corn cilantro vinaigrette, jicama slaw, shredded cabbage, tomato wedges and two freshly cooked crab cakes. And the crab cakes are made of crab meat, not crackers!

Northern Arizona University
Situated in the historic North Union at Northern Arizona University, the new 1899 Bar and Grill is dishing up classic American bistro fare with a steakhouse flair, featuring many foods native to the Southwest.

The dining room seats about 100 in relaxed yet sophisticated atmosphere. It features the North Union's original copper fireplace and wood floor, which may be familiar to some alumni and visitors. Open for lunch and dinner, the 1899 Bar and Grill serves traditional steakhouse options as well as vegetarian, vegan and gluten-free dishes.
